Why do so many German breweries use hop extract? It seems that every brewery that utilizes it makes a pretty sub par product. It is just for ease of brewing at the factory breweries?
Cheaper than whole hops or hop pellets and easier to use, consistent (even more so than pellets) and simple to store before usage.

It’s been a while but since the thread is active again and just for sake of completeness, I should point out that this is not true in general. Counterexamples of excellent beers which have hop extract on the ingredients list are Witzgall and Griess.
I recently had a beer which contained a new hop, which was a liquid hop. The hop plant pisses it out or something. Can’t really remember.
