obviously, Schlenkerla and Spezial (drink the Ungespundet!) are the biggest musts. All other breweries can be picked at your convenience (Fässla is right across the street from Spezial, Keesmann & Mahrs are next to each other, and Klosterbräu has a neat location).
Sternla and Ambräusianum are not musts, but the former is quite fun.
Everything within the city is doable by walking.
In NĂĽrnberg, probably Altstadthof is the most fun.

Bamberg is of course a must for all people interested in beer. And the city is beautiful.
If you travel 10 Km. out the city then the magic really happens. Take a bus and you can walk between 3/4 of the mentioned below
Hummel Merkendorf (Serves their kellerbier B.A)
Knoblach
Griess (Most hoppy kellerbier in the region)
Rossdorf am Forst
Besides of Schlenkerla and Spezial the rest is pretty mediocre compared to the quality surrounding Bamberg.

In Nürnberg you should also pass by the Schanzenbräu Schankwirtschaft. Good beers, good Franconian Food!

… or try to get to Hallerndorf by bus from Eggolsheim. Really great breweries or just a few steps away (Roppelt Stiebarlimbach, Witzgall Schlammersdorf and Lieberth Hallerndorf (opens only on Fridays in winter) The beers are much better than in Bamberg (especially Mahrs is just a shadow of its former self!)

Tolle oberfränkische Küche, angemessenes Preisniveau, exzellenter Service. Das Bierangebot umfasst regionale Biere von guter Qualität.
Alt-Ringlein Hotel&Restaurant
Gutbürgerliche fränkische Speisekarte mit heimischen Spezialitäten. Normales Preisniveau. Biere werden frisch und gekühlt serviert. Einziger Stelle, um Ringlas Helles zu bekommen!
Ambräusianum (Monntag geschlossen, Diens-Frei 16-23, Sams 11-23, Sonn 11-21) Gute Biere, leckere traditionelle lokale Gerichte.
Cafe Abseits gibt’s leider nicht mehr.
